Once the vegetables are softened and simmered in passata, they’re mixed with the burger “mince” to create a flavourful filling. The topping is made from mashed sweet potatoes, adding a creamy, sweet layer to this savoury dish. METHOD
- Add 1 sachet of Promin Low Protein Burger Mix to a bowl.
- Add 50ml water and mix to a “mince” consistency and fry gently in a little oil.
- Add 2 Sweet potatoes, boiled into a large pan.
- Add 2 garlic cloves, crushed into the pan.
- Add 2 medium carrots, diced into the pan.
- Add 1 red pepper, chopped into the pan.
- Add 3 mushrooms, chopped into the pan.
- Add 1 red onion, chopped into the pan.
- Heat about 1 tablespoon of oil into the large pan, fry vegetables above until just soft.
- Add 500g Passata into the pan and bring to the boil, then simmer for 10 minutes until the vegetables are cooked.
- Mix cooked vegetables with the fried burger mix.
- Boil sweet potatoes and make mash.
- Place the vegetables with the burger “mince” into an ovenproof dish and spread mashed sweet potatoes on top.
