Low Protein Carrot & Coriander Soup Recipe

Ingredients

  • 3 large carrots peeled and roughly chopped
  • 1 white Onion peeled and roughly chopped
  • 1 stick of celery roughly chopped
  • 1 vegetable stock cube
  • 2 tsp garlic purée
  • 1 tblsp tomato purée
  • 2 tsp sugar
  • 2 tsp garam masala
  • 2 tsp ground cumin
  • 2 tsp ground coriander
  • 400ml coconut milk
  • Fresh Corriander leaf for garnish
  • Viocreme for garnish
  • Vegetable oil
  • Salt and pepper to taste
  • Promin Low Protein bread and buns

How To Make Low Protein Carrot & Coriander Soup

  1. Heat 2 tblsp of oil in a saucepan and add in the chopped vegetables.
  2. Gently cook the vegetables until golden in colour and add the spices, herbs, garlic purée and tomato purée
  3. Stir the vegetable stock cube into 100ml of water and add to the saucepan
  4. Stir in the stock of 100ml and top up with water so the vegetables are covered. Add the sugar and tomato purée to the saucepan until the vegetables turn soft. Add Coconut milk
  5. Using a hand blender, blend the mixture until fully smooth. If you are using any other mixer, please allow the soup to cool (check your equipment manufacture guidelines) before blending.
  6. Serve in a bowl and garnish with fresh chopped Coriander leaf and Viocreme drizzled on with a spoon.
  7. Serve with Promin Low Protein Fresh Bread or Buns
