Ingredients
- 200g Promin Imitation Rice
- 1 ltr of Boiling Water
- 15g Coriander
- 100g Violife Cheese
- 2 tsp garlic Purée
- 2 tsp Italian herb seasoning
- 100g low protein breadcrumbs
- 100g low protein flour (softasilk or white lily)
- 500ml vegetable oil
- Salt and Pepper
How To Make Low Protein Arancini Balls
- Weigh out 200g of Promin Imitation Rice and add to 1 litre of Boiling water on a High heat.
- Leave to boil and simmer for 3 minutes until the rice is soft.
- Once the rice is cooked drain and rinse with boiling water.
- Place the rice into a mixing bowl and add the Italian herbs and garlic Purée. Roughly chop 15g of coriander, and use 100g Violife cheese, grated and stir all together.
- Allow the mixture to cool and place in the fridge to chill for 3-4 hours or as long as possible.
- One the mixture is chilled and feels set enough to shape, roll out 8 evenly sized balls and cover with Flour
- Roll into the flour to coat the balls and stop them from disintegrating when fried.
- Once this achieved sprinkle the bread crumbs on to the same tray and mould the breadcrumbs in and around the mixture, ensuring they feel strong and firm.
- Very carefully heat 500ml of oil on the hob, or alternatively use an air fryer. After 5-8 minutes turn occasionally
- When your oil is hot and ready, add the Arancini balls slowly and carefully and cook for 5-8 minutes until golden on the outside
- Place on to some kitchen roll or greaseproof paper to remove any excess oil and leave to dry for a couple of minutes.
- Serve with Sweet Chilli Sauce and Garnish with coriander leaf
