Low Protein Arancini Balls Recipe

Ingredients

  • 200g Promin Imitation Rice
  • 1 ltr of Boiling Water
  • 15g Coriander
  • 100g Violife Cheese
  • 2 tsp garlic Purée
  • 2 tsp Italian herb seasoning
  • 100g low protein breadcrumbs
  • 100g low protein flour (softasilk or white lily)
  • 500ml vegetable oil
  • Salt and Pepper

How To Make Low Protein Arancini Balls

  1. Weigh out 200g of Promin Imitation Rice and add to 1 litre of Boiling water on a High heat.
  2. Leave to boil and simmer for 3 minutes until the rice is soft.
  3. Once the rice is cooked drain and rinse with boiling water.
  4. Place the rice into a mixing bowl and add the Italian herbs and garlic Purée. Roughly chop 15g of coriander, and use 100g Violife cheese, grated and stir all together.
  5. Allow the mixture to cool and place in the fridge to chill for 3-4 hours or as long as possible.
  6. One the mixture is chilled and feels set enough to shape, roll out 8 evenly sized balls and cover with Flour
  7. Roll into the flour to coat the balls and stop them from disintegrating when fried.
  8. Once this achieved sprinkle the bread crumbs on to the same tray and mould the breadcrumbs in and around the mixture, ensuring they feel strong and firm.
  9. Very carefully heat 500ml of oil on the hob, or alternatively use an air fryer. After 5-8 minutes turn occasionally
  10. When your oil is hot and ready, add the Arancini balls slowly and carefully and cook for 5-8 minutes until golden on the outside
  11. Place on to some kitchen roll or greaseproof paper to remove any excess oil and leave to dry for a couple of minutes.
  12. Serve with Sweet Chilli Sauce and Garnish with coriander leaf
