How To Make Low Protein Egg Fried Rice

This delicious Promin Low Protein Egg Fried Rice is a simple, satisfying, and flavourful meal that is perfect for anyone following a low protein diet. Using Promin Low Protein Imitation Rice and Promin Low Protein Scrambled Egg and Omelette Mix, this recipe provides a great alternative to traditional egg fried rice while still offering the familiar flavours and textures of a popular favourite.

The recipe serves 2 people as a main dish or 4 people as a side dish. It is quick and straightforward to prepare, making it a convenient option for a tasty lunch or evening meal. The combination of golden rice, lightly caramelised onion, garlic, cumin, and scrambled egg-style mixture creates a delicious savoury flavour, while the spring onions add a fresh finish.

Ingredients

Method

1. Prepare the imitation rice

Begin by bringing 1 litre of water to the boil in a large saucepan. Once the water is boiling, carefully add the 200g of Promin Low Protein Imitation Rice. Allow the rice to simmer for approximately 3 minutes, following the preparation instructions. Once cooked, drain the rice thoroughly and set it aside while you prepare the other ingredients.

It is important to drain the rice well before adding it to the frying pan, as excess water can make the finished dish softer and may prevent the rice from becoming nicely golden during frying.

2. Cook the onion

Place a large frying pan or wok over a medium heat and add approximately 3 tablespoons of vegetable oil. Add the 75g of diced onion and cook gently, stirring regularly. Allow the onion to soften and begin to turn golden brown.

Cooking the onion until it starts to brown helps develop a deeper, sweeter flavour that works particularly well with the savoury ingredients in this dish.

3. Add the garlic and cumin

Once the onion has started to brown, add 1 teaspoon of garlic purée and 1 teaspoon of ground cumin. Stir everything together thoroughly, making sure the garlic and cumin coat the onions evenly.

Continue cooking for a short time until the garlic and cumin become fragrant. Take care not to let the garlic burn, as this can create a bitter flavour.

4. Add the imitation rice

Add the drained Promin Low Protein Imitation Rice to the frying pan. Stir continuously, combining the rice with the onion, garlic, and cumin mixture.

Continue frying until the rice is evenly coated and begins to turn golden brown. Keep stirring throughout this stage to help prevent the rice from sticking to the bottom of the pan and to ensure the flavours are distributed evenly.

5. Prepare and add the egg mixture

While the rice is cooking, prepare the Promin Low Protein Scrambled Egg and Omelette Mix by stirring 50g of the mix into 100ml of water.

Once the rice is golden, make a small well in the centre of the frying pan. Add another 3 tablespoons of vegetable oil into the well, followed by the prepared scrambled egg mixture.

Begin stirring the egg mixture in the centre of the pan, allowing it to start cooking before gently folding the surrounding rice into it. Continue stirring and folding until the egg mixture is evenly distributed throughout the rice.

6. Finish the dish

If the mixture starts to stick together or becomes difficult to stir, add a little more vegetable oil. Stir gently to separate the rice and ensure everything is well combined.

Add light soy sauce to taste for an extra savoury flavour. Season with salt and pepper if required, remembering that soy sauce can already be quite salty.

Once everything is thoroughly combined and heated through, remove the pan from the heat.

7. Serve

Transfer the egg fried rice to serving bowls or plates and garnish with freshly chopped spring onions. The spring onions provide a fresh, slightly crunchy contrast to the warm, savoury rice.

Serve immediately while hot. This recipe can be enjoyed on its own as a filling main meal or served alongside other suitable low-protein dishes as part of a larger meal.

Tip: For the best results, keep the rice moving while cooking and add small amounts of oil if needed. This will help prevent sticking and give the finished dish a delicious fried texture.
