Ingredients

  • 2 tablespoons olive oil
  • 2 sachets (30g each) of Promin Low Protein Sausage Mix 
  • 2 small white onions, roughly chopped
  • 1 red bell pepper, roughly chopped
  • 1 carrot, roughly chopped
  • 1 celery stick, roughly chopped
  • 1 x 400g can of chopped tomatoes
  • 1 tablespoon tomato purée
  • 1 teaspoon garlic purée
  • 1 vegetable stock cube
  • 1 tablespoon paprika
  • 1 teaspoon sugar
  • 4 potatoes, peeled and chopped (count as exchanges)
  • 1 teaspoon dried marjoram
  • 1 teaspoon caraway seeds
  • 2 handfuls of spring greens
  • Salt and pepper, to taste
  • Fresh parsley and lemon zest, to garnish

Method

  1. Begin by heating the olive oil in a large pan over a medium heat. Once warm, add the chopped onions, red bell pepper, carrot, and celery. Cook gently, stirring occasionally, until the onions become soft and develop a lovely golden-brown colour. This step helps build the base flavour of the dish.
  2. Next, pour in the chopped tomatoes, followed by the tomato purée and garlic purée. Stir everything together so the vegetables are well coated and the flavours begin to meld.
