- Half and de-seed the peppers.
- Place in boiling salted water for 8 – 10 minutes.
- Place Promin Low Protein Cous Cous into a pan, add cold water and bring to the boil.
- Simmer for 2 minutes.
- Strain and rinse well with boiling water then add lemon juice, fresh coriander, chopped tomatoes & 2 teaspoons of oil.
- Mix well, then stuff the pepper halves.
- Bake in the oven for 15-20 minutes at 180c or gas mark 4.
